    just used this in an enchilada pie recipe - made my life so much easier! loved not having to chop onions! the flavors are sooo good. I will try more varieties of recipe ready veggies!

    There are several veggie mixes I would purchase if they did NOT have the red peppers. I like red peppers but for some reason when red peppers are frozen they have a different flavor. would you consider making a mix without the red peppers in all the mixes that now have red peppers....love the zucchini squash mix but it has red peppers

    Are the vegetables packaged in individual bags inside the main package? Individual packaging would allow those of us who don't like a particular vegetable to easily cook a separate portion without the disliked vegetable-- in my case, onions.

    I added two pacages of the Southwest mix to a pot with a little olive oil for 5 minutes. Added one can of hot rotel tomatoes (use mild if you want). Stirred and then added an entire box of Swanson Tortilla flavored broth. Let it simmer for about 20 minutes. It was delicious
