Rotisserie Chicken & Corn Burrito Bake

Ingredients

  • 1 bag (12 oz.) Steamfresh® Super Sweet Corn
  • 2 cups chunky salsa, divided
  • 2 cups shredded rotisserie chicken (without skin)
  • 2 cups shredded reduced fat Mexican blend or cheddar cheese, divided
  • 8 8-inch whole wheat flour tortillas

Cooking Instructions

 

  1. Preheat oven to 375°F. Lightly grease bottom of a medium shallow baking dish; set aside.
  2. Combine prepared Super Sweet Corn, chicken, 1-3/4 cups cheese and 1 cup salsa.
  3. Evenly spread down centers of tortillas and roll up.
  4. Arrange in prepared baking dish and top with remaining salsa and cheese.
  5. Cover with aluminum foil and bake 25 minutes or until heated through.
