Cowboy Veggie Burgers

Ingredients

  • 1 cup canned black beans
  • 1 bag (12 oz.) Steamfresh® Asparagus, Gold & White Corn, Baby Carrots, cooked according to package directions and cooled slightly
  • 1 tablespoon mustard
  • 1 cup oatmeal
  • 1 egg, beaten
  • 1 tablespoon extra virgin olive oil
  • 4 whole wheat hamburger buns, sliced
  • 4 lettuce and tomato slices
  • 4 reduced-fat cheese slices of your choice

Cooking Instructions

  1. Puree black beans in a food processor.
  2. Combine black beans, vegetables, mustard, oatmeal and egg in a bowl, mixing them well with your hands.
  3. Shape into 4 patties.
  4. Heat olive oil in a 10-inch nonstick skillet. Add the burgers and cook 1 to 2 minutes per side or until golden brown.
  5. Remove from skillet and place a burger in each bun with a slice of lettuce, tomato and cheese on top.

Kitchen Tips

Have kids get their hands dirty, mixing together patty ingredients and forming them into burger shapes.
