Twice Baked Yams

Ingredients

  • 4 yams or sweet potatoes
  • 1 bag (14.4 oz.) Steamfresh® Broccoli & Cauliflower, cooked according to package directions
  • ½ cup milk
  • ½ cup shredded cheddar cheese

Cooking Instructions

  1. Preheat oven to 400°F. Pierce yams with fork and bake 30 minutes or until fork-tender. Let cool slightly.
  2. Cut yams in half lengthwise. Use a spoon to scoop out the pulp, leaving a 1/2-inch thick shell. Arrange shells in shallow baking dish.
  3. Mash the sweet potato pulp with Broccoli & Cauliflower and milk. If desired, season with ground black pepper.
  4. Equally divide the potato mixture between the shells. Sprinkle each with 1 tablespoon cheese.
  5. Bake for 15 minutes or until cheese has melted and potatoes are heated thorugh.

Kitchen Tips

Time Saver Tip: Cook potatoes on a microwave-safe plate 10 minutes or until fork tender. Let cool and proceed to step 2.
