Broccoli Panzanella

Ingredients

  • 1 loaf whole grain Italian bread, toasted and cubed (about 10 cups)
  • 1 bag Birds Eye Deluxe Baby Vegetables Baby Broccoli Florets, cooked according to package directions
  • 4 cups baby arugula or spinach
  • 1/2 cup shredded parmesan cheese
  • 8 oz. part skim mozzarella cheese, cubed
  • 1/2 cup Italian vinaigrette dressing
  • 1/4 cup thinly sliced basil leaves
  • 1/8 tsp. freshly ground black pepper

Directions

  1. Combine all ingredients in large bowl. Serve immediately at room temperature or chill until ready to serve.
