Quinoa & Spinach Turkey Meatballs with Pomegranate Glaze

Ingredients

1 bag Birds Eye® Superfood Blends Quinoa & Spinach, cooked according to package directions and cooled

1 lb. ground turkey

¾ cups old fashioned oats

1 egg

¼ tsp. salt

1/8 tsp. ground black pepper

2 cups pomegranate juice

1 Tbsp. honey


Directions

  1. Preheat oven to 350°F. Lightly grease 13×9-inch baking dish.
  2. In large bowl combine Superfood Blends, turkey, oats, egg, salt and pepper. Form into 1-inch balls (about 1 rounded tablespoon.)
  3. Arrange in prepared dish and bake 15 minutes or until turkey is cooked through.(Do not overbake)
  4. Meanwhile bring pomegranate juice to a boil in a medium sauce pan. Continue boiling over medium high heat until reduced to approximately ½ cup. Stir in honey. Serve with meatballs.
