2 bags (10.8 oz each) Birds Eye® Steamfresh Broccoli Florets

1/4 cup butter

1/4 cup chopped onion

2 tablespoons all-purpose flour

1 cup reduced-sodium chicken broth

1/2 teaspoon kosher salt

1/4 teaspoon ground black pepper

2 ounces cream cheese
-
1-1/2 cups shredded Cheddar cheese, divided

1/2 cup sour cream

12 round buttery-flavored crackers, crushed

Directions

Step one
Preheat oven to 400°F. Spray a 2-quart baking dish with cooking spray.

Microwave broccoli according to package directions, cooking one bag at a time.

Melt butter in a large saucepan over medium heat. Cook onion in butter until tender, about 3 minutes. Whisk in flour and cook 1 minute. Whisk in chicken broth, salt, and pepper until smooth; bring to a boil. Whisk constantly until sauce is thick. Remove from heat and stir in cream cheese and 1 cup Cheddar cheese until melted. Stir in sour cream.

Stir cooked broccoli into sauce. Pour into baking dish. Top with remaining 1/2-cup Cheddar cheese and crushed crackers. Bake broccoli cheese casserole 15 minutes, until bubbling and browned.
Tips
If desired, cook and drain 8 cups Birds Eye® Broccoli Florets in place of the Steamfresh Broccoli.
