Directions
-
Step one
Bring water to a boil in large saucepan. Add ½-teaspoon salt. Cook pasta according to package directions. Ladle 1 cup pasta cooking water into a heatproof measuring cup. Drain the remaining pasta water.
-
Step two
Microwave Normandy blend vegetables for 3 minutes. Chop vegetables into smaller pieces, if desired.
-
Step three
Heat olive oil in a 12-inch skillet over medium-low heat. Add garlic and red pepper flakes and cook until garlic is tender and very lightly browned, about 3 minutes. Increase heat to medium. Add cooked Normandy blend vegetables to pan and cook for 3 minutes. Season with remaining 1/2-teaspoon salt.
-
Step four
Pour in cherry tomatoes, pasta, and about ½-cup reserved pasta cooking liquid. Cook and stir until water is mostly absorbed, about 2 minutes. Reserve a couple tablespoons of Parmesan for garnish. Sprinkle the rest of the cheese in, stirring constantly. Add more pasta water to reach your desired consistency.
-
Step five
Garnish your pasta primavera with reserved Parmesan cheese and torn fresh basil leaves and serve!
Tips
Thinly sliced garlic adds a mild garlic flavor that caramelizes and turns sweet. If you like a stronger garlic flavor, chop it fine!
