Ingredients

1 tablespoon vegetable oil

1 pound peeled and deveined jumbo shrimp, thawed if frozen

1/2 bag (32 oz each) Birds Eye® Deluxe Stir Fry Blend

1 tablespoon grated ginger
-
3 medium cloves garlic
-
1/2 tablespoon cornstarch
-
2 teaspoons rice vinegar
-
1/4 cup reduced sodium soy sauce
-
1 tablespoon firmly packed dark brown sugar

2 teaspoons toasted sesame oil

1/2 teaspoon crushed red pepper flakes

2 cups hot cooked rice, for serving

2 green onions and chili crisp, optional

Directions

Step one
Heat oil in large nonstick pan over medium high heat. Add shrimp and cook for 6 to 8 minutes, or until cooked thoroughly to 145°F. Remove shrimp from pan and set aside.

Step two
Pour stir-fry vegetables into pan and cook for 6 to 8 minutes, stirring or tossing occasionally. While veggies are cooking whisk together ginger, garlic corn starch, soy sauce, brown sugar, sesame oil, and pepper flakes in a small bowl.

Step three
Add the sauce to the vegetables and cook until sauce has thickened and is slightly bubbly on the sides, about 3 minutes. Toss shrimp in with vegetables and sauce. Serve your shrimp stir-fry with steamed rice and top with green onion or chili crisp.
