Ingredients

4 boneless skinless thin-sliced chicken breast fillets

1 teaspoon salt, divided

1/4 teaspoon ground black pepper

1/4 tablespoon extra virgin olive oil

1 tablespoon dried Italian seasoning

2 cloves garlic, chopped

1/2 teaspoon crushed red pepper flakes

1 bag (15 oz each) Birds Eye® Oven Roasters™ Seasoned Red Potato Wedges and Onions

1 bag (10.8 oz each) Birds Eye® Steamfresh Broccoli Florets

6 oil-packed sun-dried tomatoes, sliced

1/4 cup shredded Parmesan cheese, optional

Directions

Step one
Preheat oven to 425°F.

Step two
Place four 18x12-inch pieces of heavy aluminum foil on counter. Place 1 chicken cutlet on center of each piece of foil; sprinkle evenly with ½ teaspoon salt and pepper.

Whisk together olive oil, Italian seasoning, garlic, remaining ½ teaspoon salt and red pepper if desired, in a small bowl. Add potatoes and onions, and broccoli to a large bowl or resealable bag. Pour oil mixture over veggies and gently toss until evenly coated.

Step four
Spoon vegetable mixture equally over each chicken cutlet. Divide sun-dried tomatoes evenly between packets and sprinkle parmesan over the top. Fold in long sides of foil to cover chicken and vegetables and then bring ends together and fold over twice to seal for each packet.

Place packets on a baking sheet; cook 25 to 35 minutes or until chicken is no longer pink in centers (165°F). Carefully open packets and serve.
Tips
Packets may be grilled over medium-high heat 15 minutes or until chicken is no longer pink in centers (165°F). If desired, use 4 cups Birds Eye® Broccoli Florets in place of the Steamfresh Broccoli.
