1 pound ground beef (85% lean)

4 slices bacon

2 pkgs (14.4 oz each) Birds Eye® Cauliflower Florets (about 8 cups), divided use

1 small onion, chopped

2 cups chicken stock
-
1 cup heavy (whipping) cream
-
8 ounces Cheddar cheese, shredded

1 tablespoon Gulden's® Spicy Brown Mustard

1/2 teaspoon kosher salt

1/4 teaspoon ground black pepper

3 Vlasic® Kosher Dill Baby Wholes, chopped

2 green onions, sliced

Step one
Spray 6-quart electric pressure cooker pot with cooking spray and select sauté function. Add ground beef to pot and cook until crumbled and browned, about 8 minutes. Carefully drain beef and set cooked beef aside.

Add bacon to pot and cook until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate. Turn pressure cooker off.

Step three
Pour one bag (4 cups) cauliflower, chicken stock and onion into pot. Lock lid in place and close pressure release valve. Select high pressure cook function and set the timer for 2 minutes. When time is up, allow for natural pressure release for 5 minutes before slowly opening valve to release remaining steam.

Step four
Puree cheeseburger soup base using an immersion blender until smooth. Stir in remaining cauliflower, cooked ground beef and heavy cream. Select sauté function and bring to a boil. Boil until cauliflower is tender, about 5 minutes. Turn pressure cooker off. Stir in shredded Cheddar cheese and mustard and season soup with salt and pepper.

Serve keto friendly bacon cheeseburger cauliflower soup in bowls garnished with cooked bacon, chopped pickles and green onions.
