1 bag (10 oz each) Birds Eye® Steamfresh Sweet Potatoes

1/4 teaspoon chipotle chili powder

1/4 teaspoon ground cumin

1/4 teaspoon garlic powder

1/4 teaspoon kosher salt

1 small red onion, thinly sliced (about 1 cup)

1/2 cup Birds Eye® Gold and White Corn

1/2 cup black beans, drained, rinsed

8 corn tortillas (6 inch)

1 container (7.5 oz each) guacamole

1/4 cup chopped fresh cilantro

Step one
Heat oil in a large non-stick skillet over medium heat. Add sweet potatoes, chipotle chili powder, cumin, garlic powder, and salt. Cover and cook for 10 minutes, stirring occasionally. Uncover and continue cooking 2 to 3 minutes, stirring frequently, until browned as desired.

Add onion, corn, and beans to skillet and cook until onion is crisp-tender, 3 to 5 minutes.
