Ingredients

1/2 cup water

6-1/2 cups Birds Eye® Cauliflower Florets (about 24 ounces)

4 slices bacon, chopped

1 cup heavy (whipping) cream

4 ounces cream cheese
-
1 teaspoon Gulden's® Dijon mustard

1/2 teaspoon kosher salt

1/4 teaspoon cracked black pepper

4 ounces smoked Gouda cheese, shredded (1 cup)

4 ounces mozzarella cheese, shredded

1/4 cup shredded Parmesan cheese

Directions

Step one
Preheat oven to 400°F. Spray 9x13-inch baking dish with olive oil spray. Pour cauliflower and water into a large microwave-safe bowl. Cover and microwave on high 4 minutes; drain.

Heat a large nonstick skillet over medium heat. Add bacon to skillet and cook until crispy, about 5 minutes, stirring occasionally. Drain bacon on a paper towel-lined plate.

Wipe skillet clean with a paper towel. Pour in heavy cream, cream cheese, mustard, salt and pepper; bring to a gentle boil, stirring constantly. Stir in smoked gouda and mozzarella cheeses; remove from heat. Stir in cauliflower.

Pour into baking dish. Sprinkle parmesan and bacon over the top. Cover pan with aluminum foil. Bake cauliflower mac and cheese 20 minutes. Remove foil and continue baking until lightly browned and bubbly, 10 to 15 minutes.
