  • PAM® Original No-Stick Cooking Spray

  • 1 bag (14.4 oz each) Birds Eye® Cauliflower Florets

  • 1/3 cup plain nonfat Greek yogurt

  • 1/4 cup chopped cooked bacon

  • 1/4 cup sliced green onions, divided

  • 2 tablespoons Parkay® Original Spread-tub

  • 1/8 teaspoon salt

  • 1/8 teaspoon ground black pepper

  • 1/2 cup shredded sharp Cheddar cheese

Directions

  • Step one

    Preheat oven to 400°F. Spray 8x8-inch glass baking dish with cooking spray; add cauliflower. Cover and microwave on HIGH 10 minutes or until tender, stirring once halfway.

  • Step two

    Mash cauliflower with potato masher into very small pieces. Stir in yogurt, 2 tablespoons bacon, 2 tablespoons onions, Parkay, salt and pepper. Sprinkle with cheese.

  • Step three

    Bake 10 minutes or until cheese melts; top with remaining 2 tablespoons each bacon and onions just before serving.

Tips

Light sour cream may be used in place of Greek yogurt, if desired.
