5 cups Birds Eye® Deluxe California Blend (about 16 oz)

1 tablespoon vegetable oil

1/4 teaspoon kosher salt

1/2 cup shredded Parmesan cheese

Step one
Preheat oven to 425°F. Line a large rimmed baking sheet with parchment paper. Pour vegetables on baking sheet, drizzle with oil, season with salt and toss to coat. Bake vegetables 10 minutes.

Step two
Remove pan from oven. Use a heavy drinking glass to smash and flatten the vegetables. Dab vegetables with paper towel to remove some of the moisture. Sprinkle Parmesan on vegetables. Bake until cheese is melted and lightly browned, 10 to 15 minutes.
