1-1/2 tablespoons firmly packed light brown sugar

1 teaspoon vanilla extract

3/4 teaspoon sea salt

1 egg

1 cup miniature marshmallows

PECAN STREUSEL TOPPING:

1/4 cup all-purpose flour
-
1/4 cup firmly packed light brown sugar

2 tablespoons unsalted butter, melted

1/2 teaspoon sea salt

1/2 cup chopped pecans

Directions

Step one
Preheat oven to 350°F. Spray 8x8-inch baking dish with cooking spray.

Microwave sweet potatoes according to package directions cooking one bag at a time.

While potatoes are cooking make the streusel topping. Stir together flour, 1/4-cup brown sugar, 2 tablespoons melted butter, 1/2-teaspoon salt, and pecans in a small bowl and set aside.

In large mixing bowl, stir 2 tablespoons melted butter, milk, 1-1/2 tablespoons brown sugar, vanilla, and 3/4-teaspoon salt together. Add cooked sweet potatoes to bowl.

Carefully mash sweet potatoes together with the filling ingredients until combined, some lumps of potatoes may remain. Gently fold in the mini marshmallows.

Spread sweet potatoes evenly in baking dish. Top with pecan streusel topping and bake in preheated oven for 25 to 30 minutes until topping is golden brown and center is set. Allow your sweet potato casserole to cool 5 to 10 minutes before serving.
